Ingredients for - Mango Gazpacho
1. 1/4-inch-diced fresh mangoes - 2 cups
4. Seedless cucumber, cut into 1/4-inch dice - 1
5. Red bell pepper, seeded and cut into 1/4-inch dice - 1 small
6. Onion, cut into 1/4-inch dice - 1 small
7. Medium garlic cloves, minced - 2
10. Chopped fresh parsley, basil or cilantro - 2 tablespoons
How to cook deliciously - Mango Gazpacho
1. Stage
Process mangoes, orange juice and oil in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)
