How to cook deliciously - Meat pie
1. Stage
I used a yogurt maker-thermos to make the kefir. Pour 1 bag of "Natural Kefir" bacterial starter into room temperature milk (22-24 degrees). Mix thoroughly. Pour boiling water into a thermos and put a flask with milk and sourdough. Keep in warm place for 6-10 hours. Cool the ready kefir in the fridge for at least 2 hours.

Pour into the kefir melted butter, vegetable oil, egg. Stir.

Pour in the baking soda, sugar, salt. Gradually add sifted flour. You may need a little more or a little less flour.

Knead the dough until it is no longer sticky to your hands. The dough is tender, fragrant, and pliable. Cover the dough with clingfilm and put it in the freezer while we prepare the filling.

For the filling, finely chop the onion and pork. It is better to fry the onion lightly until half cooked. I did not do this.

Take the dough out of the freezer, divide it into two unequal parts. In a large mold, I have a diameter of 24 cm, cover it with baking paper. Roll out the larger part of the dough thinly, put it in the form, forming high sides.

Roll out the second part of the pastry and cover the filling, carefully pinch the edges. Stab the top of the pie with a fork in several places, sprinkle with sesame seeds if desired.

Bake the pie in a preheated 180 degrees oven for 25 minutes, then turn down the temperature to 150 degrees and bake for another 15-20 minutes. This is to ensure that the pie is cooked, but does not burn. Serve hot.
