Ingredients for - Peanut Butter Chicken

1. 1/2 cup water -
2. 2 tablespoons creamy peanut butter -
3. 4 teaspoons white wine vinegar -
4. 4 teaspoons reduced-sodium soy sauce -
5. Dash crushed red pepper flakes -
6. 3/4 pound boneless skinless chicken breasts, cut into 1-inch strips -
7. 4 garlic cloves, minced -
8. 2 teaspoons minced fresh gingerroot -
9. 2 teaspoons canola oil -
10. 1 cup hot cooked rice -
11. Thinly sliced green onions, optional -

How to cook deliciously - Peanut Butter Chicken

1. Stage

In a small bowl, combine the first five ingredients and set aside.

2. Stage

Saute the chicken, garlic and ginger in oil for five minutes in a large skillet.

3. Stage

Add the peanut butter mixture and bring it to a boil. Reduce heat and simmer, uncovered, for five minutes or until the chicken juices run clear, stirring frequently.

Serve with rice and sprinkle with thinly sliced green onion if desired.
