1. White sugar 1 ½ cups
2. Cornmeal 3 tablespoons
3. All-purpose flour 2 tablespoons
4. Salt ¼ teaspoon
5. Eggs, lightly beaten 4
6. Vanilla extract 1 teaspoon
7. Butter, melted ¼ cup
8. Flaked coconut 1 (3.5 ounce) package
9. Crushed pineapple, drained 1 (15 ounce) can
10. Unbaked pie crust 1 (9 inch)

1 . Stage

Preheat oven to 350 degrees F (175 degrees C.)

2 . Stage

In a large bowl, combine sugar, cornmeal, flour and salt. Blend in eggs and vanilla. Stir in butter, coconut and pineapple. Pour filling into pie shell.

3 . Stage

Bake in the preheated oven for 60 minutes, or until filling is set. Cover with aluminum foil after 40 minutes. Cool on a wire rack.
