To prepare the dough you need to mix the flour, sugar, salt, melt the butter with them, then add the egg yolk and again mix thoroughly, knead the dough.

Next, you need to distribute the dough on the bottom and sides of the form (preferably a spring form with a diameter of about 22 cm) and send it to the freezer for 30 minutes. I did not have a spring form of the required diameter, and the form with a diameter of 22 cm was not divided, so beforehand I greased the bottom and sides of the form with butter. After the form with the dough is sent to the oven heated to 230 degrees for 10 minutes, then for 5 minutes at 190 degrees.

Meanwhile, the plums should be cut into 4 parts, if they are very large, small - into 2 parts, of course, take out the pips. Then the form is taken out of the oven, the bottom and sides of the dough are smeared with a mixture of jam and cognac, plums are placed on the dough, sprinkled with cinnamon and lemon zest, and the tray is returned to the oven for half an hour at 180 degrees.

Take the finished hot tart out of the oven and sprinkle with sugar!
