1. Butter - 2 tablespoons
2. Grapeseed oil - 1 tablespoon
3. Shallots, minced - 2 medium
4. Garlic, minced - 2 cloves
5. Red curry paste - 1 tablespoon
6. Diced tomatoes, drained - 1 (14.5 ounce) can
7. Coconut milk - 1 cup
8. Chopped roasted red bell pepper - ¼ cup
9. Chopped cilantro - ¼ cup
10. Lime juice, or to taste - 1 tablespoon
11. Ground cayenne pepper - 1 teaspoon
12. Salt - 1 pinch
13. Cornstarch - 1 teaspoon
14. Uncooked medium shrimp, peeled and deveined - 1 pound
15. Cooked jasmine rice - 2 cups

How to cook deliciously - Brazilian Shrimp Stew

1. Stage

Melt butter in a large saucepan and add oil. Add shallots, garlic, and curry paste. Saute until fragrant, and garlic is browned, about 1 minute. Stir in tomatoes, coconut milk, roasted red bell pepper, and cilantro; bring to a simmer.

Add lime juice (go sparingly, adjusting to taste), cayenne, and salt. Add cornstarch and stir to thicken. Add in shrimp; simmer until shrimp are pink and opaque, about 3 minutes.
