2. Grapeseed oil 1 tablespoon
3. Shallots, minced 2 medium
4. Garlic, minced 2 cloves
5. Red curry paste 1 tablespoon
6. Diced tomatoes, drained 1 (14.5 ounce) can
7. Coconut milk 1 cup
8. Chopped roasted red bell pepper ¼ cup
9. Chopped cilantro ¼ cup
10. Lime juice, or to taste 1 tablespoon
11. Ground cayenne pepper 1 teaspoon
12. Salt 1 pinch
13. Cornstarch 1 teaspoon
14. Uncooked medium shrimp, peeled and deveined 1 pound

1 . Stage

Melt butter in a large saucepan and add oil. Add shallots, garlic, and curry paste. Saute until fragrant, and garlic is browned, about 1 minute. Stir in tomatoes, coconut milk, roasted red bell pepper, and cilantro; bring to a simmer.
