How to cook deliciously - Raspberry Mousse
1. Stage
Place the washed raspberries in a food processor and blend them until smooth. Next, strain the puree using a mesh colander to create a silky texture, removing and discarding the seeds. Transfer the strained puree to a large bowl, then thoroughly mix in the sugar and lemon juice.

In a small saucepan, sprinkle the gelatin over the cold water, and let it stand for one minute. Then, gently heat the saucepan and stir until the gelatin has completely dissolved. Next, mix the gelatin mixture into the puree and combine everything thoroughly. Chill the raspberry mousse in the fridge until it's slightly thickened, about an hour.
3. Stage
Transfer the mixture to a large bowl. Using a hand mixer on high speed, beat the mousse until it becomes foamy. Then, gradually pour in the heavy whipping cream and continue beating until thickened, about two minutes.
4. Stage
Spoon the mousse into individual dessert dishes and cover them. Refrigerate until the mousse sets, one to two hours. Garnish with fresh mint leaves and additional raspberries before serving, as desired.
