2. Red potatoes, cut into 1/2-inch cubes - 4 medium
3. Diced yellow onion - ⅓ cup
4. Truffle oil - 3 tablespoons
5. Chopped fresh parsley - 2 tablespoons
6. Shredded Parmesan cheese - ⅓ cup

1. Stage

Preheat the oven to 350 degrees F (175 degrees C). Spray a glass baking dish with cooking spray.

Combine potatoes, onion, truffle oil, and parsley in the prepared baking dish; stir to coat potatoes with oil.
