1. Ground chorizo sausage (or favorite flavor sausage) - 1 (1 pound)
2. Chopped onion - 1 cup
3. Minced fresh garlic - 1 teaspoon
4. Low-sodium chicken broth - 1 (32 ounce) carton
5. Black beans, rinsed and drained - 1 (15 ounce) can
6. Fire-roasted tomatoes (diced or whole) - 1 (14.5 ounce) can
7. Diced zucchini (1/2-inch) - 1 cup
8. Frozen roasted or plain corn - 1 cup
9. UNCLE BEN'S® Flavor Infusions Garlic & Butter Rice - ¾ cup
10. Dried Italian seasoning - 1 teaspoon
11. Shredded Parmesan cheese - ½ cup

How to cook deliciously - Savory Chorizo Sausage, Rice & Bean Soup

1. Stage

In a Dutch oven over medium heat, brown sausage (10 to 12 minutes).

2. Stage

Add onion and garlic. Continue cooking, stirring occasionally, until onion is softened (4 to 5 minutes).

3. Stage

Add remaining ingredients except Parmesan cheese.

Reduce heat to low; continue cooking 12 to 15 minutes.

Scoop into individual bowls and sprinkle with 1 tablespoon Parmesan cheese. Refrigerate leftovers.
