1. Olive oil 3 tablespoons
2. Lemon juice 2 tablespoons
3. Chili powder 2 teaspoons
4. Ground cumin 1 teaspoon
5. Onion Powder ½ teaspoon
6. Garlic salt ½ teaspoon
7. Black pepper ⅛ teaspoon
8. Cayenne pepper, or to taste 1 pinch
9. Bell peppers, sliced 2 medium
10. White onion, sliced 1 large
11. Mahi mahi fillets, cut into 1-inch slices 4 (4 ounce)

1 . Stage

Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.

2 . Stage

Stir olive oil, lemon juice, chili powder, cumin, onion powder, garlic salt, black pepper, and cayenne together in a bowl.

Spread bell peppers and onion on the prepared sheet pan. Pour 1/2 the marinade over vegetables; toss until well coated.
