1. Olive oil - 3 tablespoons
2. Garlic, minced - 3 cloves
3. Beef sirloin steak, cut into cubes - 1 ½ pounds
4. Mushrooms, with liquid - 1 (16 ounce) can
5. Tomato sauce - 1 (8 ounce) can
6. Red wine, or more to taste - ¾ cup
7. Salt and freshly ground black pepper to taste - ¾ cup

1. Stage

Heat oil in a large skillet over medium-high heat. Add beef and sear until browned on all sides, 5 to 7 minutes. Stir in garlic and cook until fragrant, about 1 minute.

2. Stage

Add undrained mushrooms, tomato sauce, red wine, salt, and pepper. Simmer until beef is tender, about 30 minutes, adding a little more wine if desired. An instant-read thermometer inserted into the beef should read 140 degrees F (60 degrees C) for medium.
