2. Chopped yellow onion - ¾ cup
3. Crookneck squash, halved or quartered lengthwise, sliced into 1/4-inch slices - 2 pounds
4. Salt and ground black pepper to taste - 2 pounds
5. Minced fresh parsley (Optional) - 1 teaspoon

How to cook deliciously - Skillet Crookneck Squash and Onions

1. Stage

Melt ghee in a large nonstick skillet over medium heat. Add onion and cook, stirring occasionally, until onion is soft and fragrant, about 2 minutes. Add squash, season with salt and pepper, and cook, stirring frequently, for 5 more minutes.
