2. Chopped yellow onion ¾ cup
3. Crookneck squash, halved or quartered lengthwise, sliced into 1/4-inch slices 2 pounds
4. Salt and ground black pepper to taste 2 pounds
5. Minced fresh parsley (Optional) 1 teaspoon
