1. Chicken gizzards - 2 pounds
2. Chili powder, or more to taste - 1 tablespoon
3. Ground cumin - 1 ½ teaspoons
4. Hot sauce - 2 dashes
5. Salt and ground black pepper to taste - 2 dashes
6. Onion, diced - 1 small
7. Bell pepper, diced - 1 small
8. Condensed cream of mushroom soup - 1 (10.5 ounce) can
9. Diced tomatoes with green chile peppers (such as RO*TEL®) - 1 (10 ounce) can
10. Sour cream - 1 (16 ounce) container

1. Stage

Trim and discard as much connective tissue from gizzards as possible. Place gizzards in a slow cooker and season with chili powder, cumin, hot sauce, salt, and pepper. Add onion and bell pepper.

2. Stage

Mix condensed soup and diced tomatoes with chile peppers together in a bowl. Pour over the gizzards.

3. Stage

Cook on High until fork-tender, 3 to 4 hours. Stir in sour cream and cook for 15 to 20 more minutes.
