Ingredients for - Sweet Potato Pecan Waffles

1. Canned sweet potato puree - 1 cup
2. Egg yolks - 3
3. Milk - 1 cup
4. Cake flour - 1 ½ cups
5. Baking powder - 1 tablespoon
6. White sugar - 1 tablespoon
7. Salt - 1 teaspoon
8. Ground nutmeg - 1 teaspoon
9. Chopped pecans - ¼ cup
10. Egg whites - 3
11. Butter, melted - 3 tablespoons
12. Pecans, chopped - 2 tablespoons

How to cook deliciously - Sweet Potato Pecan Waffles

1. Stage

Stir together flour, baking powder, sugar, salt, nutmeg, and 1/4 cup pecans.

2. Stage

Mix sweet potato puree, egg yolks, and milk in a large bowl until well combined. Add flour mixture, and mix well.

3. Stage

Beat egg whites until stiff peaks form. Fold 1/4 of the egg whites into batter. Lightly fold remaining whites and melted butter into the batter.

4. Stage

Cook in a hot waffle iron. Garnish with more chopped pecans.
