1. Beef cube steaks - 4 (1/2 pound)
2. All-purpose flour, divided - 2 ¼ cups
3. Baking powder - 2 teaspoons
4. Baking soda - 1 teaspoon
5. Black pepper - 1 teaspoon
6. Salt - ¾ teaspoon
7. Buttermilk - 1 ½ cups
8. Hot pepper sauce (e.g. Tabasco™) - 1 tablespoon
9. Egg - 1 large
10. Garlic, minced - 2 cloves
11. Vegetable shortening for frying - 3 cups
12. Milk - 4 cups
13. Kosher salt and ground black pepper to taste - 4 cups

Heat shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Place a wire rack over a sheet of parchment paper.

While the shortening is heating, dredge a steak in flour to coat; shake off excess. Dip into buttermilk batter; lift up so excess batter drips back into the bowl.
