Let's start with the sweet pastry dough! This is the fluffiest dough I've ever made! It's also the quickest to knead! Just mix all the dry ingredients (yeast, salt, sugar, and flour). Melt the butter and mix with warm whey. Gradually pour the whey and butter into the dry mixture and knead the dough. It is better just with a spoon - the dough is sticky, but that's how it should be. We put it in a warm place without drafts for 3 hours, covered with a lid, cling film or a towel. After time, knead the dough with flour - it is sticky, but very airy. You can bake sweet rolls, bread or pie. I made a cinnamon pie: I divided the dough into 4 parts, rolled into shapes. I sprinkled sugar and cinnamon on three of the dough pieces, and the fourth was the biggest. It covered the whole pie and smeared with milk. Bake for 20-25 minutes at 200 g. Finished pie smeared again with milk, sprinkled and left to rest under a towel for 30 minutes.
2. Stage
The dough for unsweetened baked goods is the most obedient I've ever seen! It's like pastry! Dissolve the yeast, sugar and salt in the warm whey and leave for 10 minutes. Add 1 cup of flour and melted butter. Then use a whisk to mix it well. Add vinegar baking soda and remaining flour. Knead the dough by hand and leave also in a warm place for 3 hours. Both types of dough can be prepared in the evening and put in the refrigerator until morning. Or freeze.
3. Stage
The dough rolls out even without flour. I made patties with green onions and eggs. The filling is up to you. By the way, sweet pies would be delicious, too
4. Stage
These are the pretties. It is better to grease with vegetable oil before and after baking - then the patties will be golden in color. This is the number of patties from about 1/3 of the dough. I froze the rest until next time.
