Ingredients for - Vegan Sweet Potato and Tofu Soup

1. Vegan margarine (such as Earth Balance®) - 2 tablespoons
2. Peeled and cubed sweet potato - 1 cup
3. Vegetable broth - 3 cups
4. Dried tofu, broken up - 1 cup
5. Garlic powder - 1 tablespoon
6. Dried basil - ½ teaspoon
7. Ground thyme - ¼ teaspoon
8. Dried rosemary - ¼ teaspoon

How to cook deliciously - Vegan Sweet Potato and Tofu Soup

1. Stage

Combine vegan margarine and sweet potatoes in a saucepan over medium heat. Cook, stirring occasionally, for 10 minutes.

2. Stage

Increase heat to high and pour broth into saucepan. Add tofu and bring to a boil, about 5 minutes. Immediately reduce heat to medium-low. Stir in garlic powder, basil, thyme, and rosemary. Cover and reduce heat to low. Simmer for 25 minutes.
