2. Broccoli florets - 1 cup
3. Diced carrots - ¼ cup
4. Cooking spray - ¼ cup
5. Eggs - 6 large
6. Shredded Cheddar cheese - 2 ½ ounces
7. Low-fat half-and-half - ¼ cup
8. Salt and ground black pepper to taste - ¼ cup

Preheat the oven to 375 degrees F (190 degrees C).

Combine cauliflower, broccoli, and carrots in a microwave-safe steamer; add water. Microwave vegetables until they are crisp-tender, about 3 minutes. Drain off water.
