1. 6 oz. soft, fresh goat cheese -
2. 1/4 c. lightly toasted sliced almonds -
3. 1/4 c. finely chopped dried apricot -
4. 1/4 c. finely chopped minced onion -
7. 1 1/2 tsp. sherry vinegar -
9. 1 1/2 tsp. harissa -
10. 1 1/2 tsp. honey -
12. 3 tbsp. Extra virgin olive oil -
13. 36 radishes -
14. 3 tbsp. roughly chopped cilantro leaves -
How to cook deliciously - Ana Sortun's Moroccan Spiced Radishes
1. Stage
In electric mixer with paddle attachment, beat goat cheese until creamy. Add almonds, apricot, onion, salt, and pepper and blend.
2. Stage
In a bowl, whisk together vinegar, lemon juice, harissa, honey, and garlic. Whisk in olive oil.
3. Stage
Cut radishes into 1/2-inch dice. You should have about 2 cups.
4. Stage
Combine radishes and cilantro. Add enough dressing to coat. Season with salt and pepper.
5. Stage
Divide radishes among 6 salad plates and top with a dollop of goat cheese. Serve with crusty bread.
