1. Freshly squeezed grapefruit juice - ⅓ cup
2. Freshly squeezed orange juice - ⅓ cup
3. Extra virgin olive oil - ⅓ cup
4. Salt to taste - ⅓ cup
5. Arugula - rinsed, dried and torn - 6 ounces
6. Pear, cored and sliced - 1
7. Red bell pepper, thinly sliced - 1

In a jar with a tight fitting lid, combine grapefruit juice, orange juice, olive oil, and salt. Shake vigorously.
