Ingredients for - Beef Bourguignon III

1. Lean stew beef - 2 pounds
2. Red wine - 1 cup
3. Fresh parsley - 4 sprigs
4. Fresh thyme - 1 sprig
5. Bay leaf - 1
6. Butter - 4 tablespoons
7. Onion, sliced - 1
8. All-purpose flour - 1 tablespoon
9. Beef broth - ¼ cup
10. Salt and ground black pepper to taste - ¼ cup
11. Butter - 2 tablespoons
12. Bacon, chopped - 4 ounces
13. Onions - 12 small
14. Button mushrooms, sliced - 4 ounces

How to cook deliciously - Beef Bourguignon III

1. Stage

In a medium bowl, combine beef, wine, parsley, thyme and bay leaf. Let marinate for 3 hours.

2. Stage

Remove beef; strain and reserve marinade. Heat 4 tablespoons butter in a large heavy saucepan over medium high heat. Saute the sliced onion until tender. Stir in beef, and cook until evenly brown. Remove beef and onion; set aside. Add flour to pan, and cook, stirring, until brown. Slowly stir in beef broth, then the reserved marinade. Return the beef mixture to the pan. Cover, and simmer for 3 hours.

3. Stage

Heat 2 tablespoons butter in a medium skillet over medium high heat, Stir in the bacon and small onions, and saute until onions are tender. Add mushrooms, and continue cooking until mushrooms are golden brown. Serve as a garnish. Unknown
