1. 1 pound ground beef -
2. 1 medium onion, chopped -
3. 3 cups diced peeled potatoes -
4. 1/2 cup water -
5. Salt and pepper to taste -
6. 1 can (14-1/2 ounces) diced tomatoes, undrained -
7. 4 large eggs, room temperature, lightly beaten -
8. 4 ounces Velveeta, sliced -

How to cook deliciously - Breakfast Scramble

1. Stage

In a large skillet, cook the ground beef and chopped onions over medium heat until the meat is no longer pink, crumbling the beef as it cooks. Drain any excess fat from the pan. Editor's Tip: Break up the meat with the back of a spoon or spatula until it forms crumbles.

Next, add the diced potatoes, water, salt and pepper. Cover and simmer until the potatoes are tender, about 20 minutes.

Once the potatoes are soft, add the tomatoes to the same skillet and cook for five minutes. Pour the eggs over the mixture. Cook and stir until the eggs are completely set. Editor's Tip: Before you add the eggs, beat them together in a small bowl (as you would when making scrambled eggs).

Top the eggs with cheese. Cover and cook until the cheese is melted, about one minute.
