Ingredients for - Coconut Curry Cabbage

1. Olive oil - 1 tablespoon
2. Butter - 2 tablespoons
3. Yellow onion, thinly sliced - 1 small
4. Julienned carrots - 1 cup
5. Garlic, minced - 1 clove
6. Cabbage, sliced - 1 small head
7. Fresh shredded coconut - ½ cup
8. Indian curry powder - 2 tablespoons
9. Coconut milk - ¾ cup
10. Salt and pepper to taste - ¾ cup
11. Diced fresh tomato - ¼ cup
12. Chopped green onions - ¼ cup
13. Chopped cilantro - ¼ cup

How to cook deliciously - Coconut Curry Cabbage

1. Stage

Place a large skillet or wok over high heat. Heat the oil and butter until smoking. Stir fry the onion, carrot, and garlic until the onion begins to soften, about 1 minute. Add the cabbage, coconut, and curry powder; stir fry for 2 more minutes.

2. Stage

Reduce heat to medium-low; pour in the coconut milk, and season to taste with salt and pepper. Cover, and cook to desired doneness. To serve, sprinkle with tomato, green onions, and cilantro.
