1. Butter - 2 tablespoons
2. Onion, chopped - 1 small
3. Celery, chopped - 1 stalk
4. Carrot, chopped - 1 medium
5. Potatoes, cubed - 2 medium
6. Butternut squash - peeled, seeded, and cubed - 1 medium
7. Chicken stock - 1 (32 fluid ounce) container
8. Salt and freshly ground black pepper to taste - 1 (32 fluid ounce) container

Melt butter in a large pot over medium heat, and cook onion, celery, carrot, potatoes, and squash until lightly browned, about 5 minutes. Pour in enough of the chicken stock to cover vegetables. Dotdash Meredith Food Studios

Bring to a boil over medium-high heat. Reduce heat to low, cover pot, and simmer until all vegetables are tender, about 40 minutes.
