2. Diced fresh tomato - ⅔ cup
3. Diced cucumber - ⅔ cup
4. Diced carrots - ½ cup
5. Diced celery - ½ cup
6. Diced onion - 2 tablespoons
7. Chopped fresh cilantro (Optional) - 2 tablespoons
8. Chopped slivered almonds - 2 tablespoons
9. Lime, zested and juiced, divided - 1
10. Extra virgin olive oil - 4 tablespoons
11. Real maple syrup (Optional) - 2 teaspoons
12. Dijon mustard - 1 teaspoon
13. Minced garlic - ¼ teaspoon
14. Salt and ground black pepper to taste - ¼ teaspoon
15. Chopped fresh cilantro, or to taste (Optional) - 2 teaspoons

1. Stage

Combine riced cauliflower, tomato, cucumber, carrots, celery, onion, cilantro, almonds, and lime zest in a large bowl.
