1. Water ½ cup
2. White distilled vinegar ½ cup
3. Fish sauce 2 tablespoons
4. Brown sugar ½ cup
5. Ketchup 1 tablespoon
6. Sambal chili sauce 2 teaspoons
7. Cornstarch 1 ½ teaspoons
8. Finely crushed garlic 6 cloves
9. Finely minced Thai chili peppers (bird's eye peppers) 2 tablespoons
10. Fresh lime juice 1 tablespoon

How to cook deliciously - Chef John's Thai-Style Sweet Chili Sauce

1 . Stage

Place 1/2 cup cold fresh water and vinegar in a saucepan. Whisk in Asian fish sauce, brown sugar, ketchup, sambal chili sauce, and cornstarch. Whisk until cornstarch disappears. Place over medium-high heat and bring up to a simmer stirring occasionally. As it bubbles, it will start to thicken up. Remove pan from heat.

2 . Stage

Whisk garlic and chili into hot mixture. Add fresh lime juice; whisk again. Allow mixture to cool to room temperature before checking for seasonings.

3 . Stage

If not using immediately, transfer to a glass jar with a lid. Refrigerate. Chef John
