Ingredients for - Basic Vegetable Stock

1. Carrots 2 large
2. Celery, including some leaves 2 stalks
3. Onion 1 large
4. Olive oil 1 tablespoon
5. Green onions, chopped 1 bunch
6. Garlic, minced 8 cloves
7. Fresh parsley 8 sprigs
8. Fresh thyme 6 sprigs
9. Bay leaves 2 large
10. Salt 1 teaspoon
11. Water 2 quarts

How to cook deliciously - Basic Vegetable Stock

1 . Stage

Chop carrot, celery, and onion into 1-inch chunks.

2 . Stage

Heat oil in a soup pot over high heat. Add carrots, celery, onion, scallions, garlic, parsley, thyme, and bay leaves. Cook, stirring frequently, until vegetables soften and begin to brown, 5 to 10 minutes.

3 . Stage

Add salt and water and bring to a boil. Lower heat and simmer, uncovered, 30 minutes.

4 . Stage

Strain. Discard vegetables.
