2. Chopped onion - ¼ cup
3. Taco seasoning, divided - 3 tablespoons
4. Fire-roasted diced tomatoes, with juice - ½ (14 ounce) can
5. Chicken broth - 1 cup
6. Frozen corn - ⅓ cup
7. Boneless, skinless chicken breast, thinly sliced on the diagonal - 1 (5 ounce)
8. Tortilla chips - ½ cup
9. Avocado, sliced - ½
10. Shredded Oaxaca cheese, or to taste - ¼ cup
11. Sour cream, or to taste - 2 tablespoons

How to cook deliciously - Chicken Taco Soup for Two

1. Stage

Heat oil in a heavy saucepan over medium-high heat until shimmering. Add onion and 1 1/2 tablespoons taco seasoning. Cook until onions are soft and translucent, 3 to 4 minutes. Stir in tomatoes with juice, chicken broth, and corn.
