Ingredients for - Chipotle Barbacoa

1. Vegetable oil - 2 tablespoons
2. Beef chuck roast, trimmed and cut into 4 to 6 pieces - 1 (2 pound)
3. Chipotle peppers in adobo sauce - 4
4. Apple cider - ⅓ cup
5. Lime juice - 3 tablespoons
6. Garlic, peeled, or more to taste - 4 cloves
7. Cumin - 4 teaspoons
8. Serrano chile pepper, chopped (Optional) - 1
9. Ground cayenne pepper, or more to taste (Optional) - 1 tablespoon
10. Dried oregano - 2 ½ teaspoons
11. Ground black pepper - 1 teaspoon
12. Garlic powder - 1 teaspoon
13. Salt - ½ teaspoon
14. Ground cloves - ½ teaspoon
15. Chicken broth - 1 cup
16. Onion, finely chopped - 1 small
17. Bay leaves - 3

How to cook deliciously - Chipotle Barbacoa

1. Stage

Heat oil in a large skillet over low heat, gradually increasing heat to medium-high. Cook beef in hot oil until browned, about 10 seconds per side. Transfer beef to a slow cooker.

2. Stage

Combine chipotle peppers, apple cider, lime juice, garlic, cumin, serrano pepper, cayenne pepper, oregano, black pepper, garlic powder, salt, and cloves in a blender or food processor; blend until smooth. Pour over beef in the slow cooker.

Stir broth, onion, and bay leaves into the slow cooker.

Cook on Low until beef is fork-tender, 6 to 8 hours. Shred beef using 2 forks to serve.
