Ingredients for - Coconut Bread Pudding from Silk®

1. Brown sugar or dark brown sugar ¾ cup
2. Silk® Original or Vanilla Coconutmilk 3 cups
3. Eggs or equivalent egg substitute 4
4. Cinnamon 1 teaspoon
5. Ground nutmeg ¼ teaspoon
6. Salt ½ teaspoon
7. Coconut extract 2 tablespoons
8. Coconut or dark rum (Optional) ¼ cup
9. Flaked coconut (sweetened or unsweetened), divided 2 cups
10. Whole grain bread, cut into 1-inch cubes 1 (1 pound) loaf

How to cook deliciously - Coconut Bread Pudding from Silk®

1 . Stage

Preheat oven to 325 degrees F.

2 . Stage

Coat a 9x13 pan with cooking spray.

3 . Stage

In a large bowl, whisk together sugar, Silk, eggs, (or egg substitute), spices, salt, coconut extract and rum, if using.

4 . Stage

Stir in 1 1/2 cups flaked coconut.

5 . Stage

Gently stir in bread cubes until evenly coated.

6 . Stage

Spoon mixture into prepared pan, cover with plastic wrap and let sit for 30 minutes.

7 . Stage

Place pan on a cookie sheet and bake for 25 minutes.

8 . Stage

Sprinkle with remaining 1/2 cup flaked coconut and bake for an additional 25 minutes, or until center springs back.

9 . Stage

Serve warm.
