1. 8 pounds russet potatoes -
2. 1 package (8 ounces) cream cheese, softened -
3. 1/2 cup butter, melted -
4. 2 teaspoons salt -
5. 3/4 teaspoon pepper -
6. Additional melted butter, optional -
7. 1/4 cup finely chopped green onions -

How to cook deliciously - Creamy Mashed Potatoes

1. Stage

Peel the potatoes. Cut the potatoes into cubes. Place the potatoes in a large stockpot, and add water to cover. Bring the water to a boil, then reduce the heat. Cook, uncovered, until the potatoes are tender, 12 to 15 minutes. Drain the potatoes. Editor's Tip: You'll know when the potatoes are finished cooking if they're tender enough to pierce with a fork.

2. Stage

With a mixer, beat the softened cream cheese, 1/2 cup melted butter, the salt and the pepper until smooth.

3. Stage

Add the potatoes to the mixer bowl and beat until light and fluffy.

4. Stage

If desired, top the mashed potatoes with additional melted butter. Sprinkle with green onions.
