1. 1 pound ground beef -
2. 1 medium sweet red pepper, chopped -
3. 1/2 medium onion, chopped -
4. 1 tablespoon taco seasoning -
5. 1 can (15-1/4 ounces) black beans, rinsed and drained -
6. 1 can (10 ounces) diced tomatoes and green chiles, undrained -
7. 1 cup sour cream -
8. 1 package (9-1/4 ounces) Doritos -
9. 3 cups shredded cheddar cheese, divided -
10. Optional: sliced or cubed avocado, salsa, sliced jalapeno peppers and additional sour cream -

How to cook deliciously - Doritos Casserole

1. Stage

Preheat the oven to 350°F. In a large skillet, cook the ground beef, red pepper and onion over medium heat until the beef is browned, seven to eight minutes. Stir in the taco seasoning, black beans and diced tomatoes. Let everything simmer until they've thickened, one to two minutes. Remove the skillet from the heat and add sour cream until it's well combined with the other ingredients.

2. Stage

In a greased 13x9-inch baking dish, layer half of the Doritos, half of the meat mixture and 1-1/2 cups of cheddar. Repeat the layers.

Bake until the cheese melts and becomes bubbly, 25 to 30 minutes. If desired, top servings of the casserole with avocado, salsa, jalapenos and additional sour cream.
