1. Skinless, boneless chicken breast, cut into 1-inch cubes - 1 pound
2. Salt and ground black pepper to taste - 1 pound
3. Olive oil - 2 tablespoons
4. Shallot, chopped - 1 medium
5. Garlic, minced - 1 clove
6. Tomatoes, chopped - 2 medium
7. Condensed cream of mushroom soup - 1 (10.5 ounce) can
8. Chicken broth - ½ cup
9. Sour cream - ¼ cup
10. Fresh spinach - 1 (10 ounce) package
11. Shredded mozzarella cheese - 1 cup

How to cook deliciously - Easy Chicken Florentine

1. Stage

Season chicken with salt and pepper.

2. Stage

Heat oil in a deep skillet over medium heat. Add chicken and saute until no longer pink in the center and the juices run clear, 6 to 8 minutes. Remove chicken to a plate.

Add shallot and garlic to the skillet and cook for about 2 minutes. Add tomatoes and cook 2 more minutes. Add condensed soup, chicken broth, and sour cream; stir to combine. Add spinach and cook for 5 minutes.
