1. 2 cups chopped onion -
2. 1/4 cup butter, cubed -
3. 4 cups uncooked long grain rice -
4. 2 cans (6 ounces each) small pitted ripe olives, drained -
5. 2 cans (28 ounces each) diced tomatoes, undrained -
6. 1 cup chopped green pepper -
7. 1 tablespoon salt -
8. 1 to 2 teaspoons chili powder -
9. 1 teaspoon dried oregano -
10. 1/2 teaspoon pepper -
11. 4 cups water -
12. 3 cups shredded cheddar cheese -

How to cook deliciously - Fiesta Rice

1. Stage

In a small skillet over medium heat, saute the onion in butter until tender. Transfer to a large bowl. Stir in the next eight ingredients.

2. Stage

Divide between two ungreased 13-in. x 9-in. baking pans. Stir 2 cups of water into each pan. Cover and bake at 350° for 1-1/2 hours. Uncover; sprinkle with cheese. Return to the oven for 5-10 minutes or until cheese melts.
