1. Vegetable oil - ¼ cup
2. Cooking sherry - 2 tablespoons
3. Prepared pesto - 2 tablespoons
4. Freshly squeezed lemon juice - 1 tablespoon
5. Salt - ½ teaspoon
6. Pepper - ¼ teaspoon
7. Boneless skinless chicken breasts, cut into 1-inch chunks - 1 ½ pounds
8. Mushrooms - 1 (8 ounce) package
9. Zucchini, cut into chunks - 1 small
10. Red onion, cut into chunks - 1 medium
11. Grape tomatoes - 12
12. 6 metal skewers - 12

How to cook deliciously - Grilled Pesto Chicken Kabobs

1. Stage

Whisk oil, sherry, pesto, lemon juice, salt, and pepper together in a glass bowl. Add chicken pieces and stir to coat. Cover and refrigerate for 4 hours to overnight.

Preheat an outdoor grill for medium-high heat and lightly oil the grate.

Thread marinated chicken, mushrooms, zucchini, red onion, and tomatoes alternately onto skewers. Reserve remaining marinade.
