1. Sea scallops - ½ pound
2. Medium shrimp - ¼ pound
3. Fresh mussels - ½ pound
4. Calamari rings - ¼ pound
5. Pitted kalamata olives - ½ cup
6. Lemon juice - 2 tablespoons
7. Olive oil - ⅓ cup
8. Garlic, minced - 1 large clove
9. Minced fresh parsley - 1 tablespoon
10. Minced fresh chives - 1 tablespoon
11. Red pepper flakes - ¼ teaspoon
12. Lemon, sliced - 1
13. Red onion, thinly sliced - 1 medium
14. Mixed salad greens - 6 cups
15. Freshly ground pepper to taste - 6 cups
16. Salt - 6 cups

How to cook deliciously - Italian Marinated Seafood Salad

1. Stage

Bring a large pot of water to boiling. Cook scallops, shrimp, mussels, and calamari in boiling water for 2 minutes. Drain. Peel the shrimp, and shell the scallops and mussels.

2. Stage

Place cooked seafood and olives in a large bowl, and toss with lemon juice, olive oil, garlic, parsley, chives, and red pepper flakes. Chill for 1 hour.

3. Stage

Divide salad greens onto 6 plates or salad bowls. Spoon seafood over greens. Garnish with slices of lemon and red onions. Season with salt and freshly ground black pepper.
