Ingredients for - Lighter Basil Pesto

1. Fresh basil - 2 cups
2. Garlic - 2 cloves
3. Pine nuts - 1 tablespoon
4. Part-skim ricotta cheese - ¼ cup
5. Grated Parmesan cheese - ¼ cup
6. Olive oil - 2 teaspoons
7. Salt and ground black pepper to taste - 2 teaspoons
8. Vegetable broth, or as needed - 2 tablespoons

How to cook deliciously - Lighter Basil Pesto

1. Stage

Chop basil, garlic, and pine nuts in a food processor. Add ricotta cheese to the basil mixture and process. Repeat with Parmesan cheese, olive oil, salt, and black pepper. Add vegetable broth and process until sauce is smooth. Add more broth if pesto is too thick.
