2. Pumpkin Puree 1 (15 ounce) can
3. White sugar 1 cup
4. Buttermilk ⅓ cup
5. Safflower oil ¼ cup

7. Pumpkin pie spice 2 teaspoons
8. Vanilla extract 1 teaspoon
9. All-purpose flour 2 cups
10. Oat flour 1 cup
11. Baking powder 1 teaspoon
12. Baking soda 1 teaspoon
13. Salt 1 pinch
14. White sugar 2 tablespoons
15. Ground cinnamon 1 teaspoon
16. Melted butter, or more as needed 2 tablespoons

1 . Stage

Preheat the oven to 350 degrees F (175 degrees C). Line 23 muffin cups with paper liners.

Mash bananas in a large bowl. Add pumpkin puree, sugar, buttermilk, safflower oil, eggs, pumpkin pie spice, and vanilla extract; mix by hand until well incorporated.
