Marshmallow jam

If there are pieces of fruit or seeds in the jam, then rub it through a fine sieve. I have purchased orange jam.

Bring the syrup to 110 degrees. Protein and jam should have increased in volume and become lighter by this time.

Thinly pour the syrup into the protein and jam. Beat at maximum speed.

The marshmallow mass should hold its shape well. If necessary, add a drop of food coloring.

Transfer to a pastry bag with a nozzle. I have 1 m. Place on parchment. Let stand for 5-6 hours at room temperature.
