Ingredients for - Mediterranean Lentil Salad

1. Dry brown lentils 1 cup
2. Diced carrots 1 cup
3. Red onion, diced 1 cup
4. Garlic, minced 2 cloves
5. Bay leaf 1
6. Dried thyme ½ teaspoon
7. Lemon juice 2 tablespoons
8. Diced celery ½ cup
9. Chopped parsley ¼ cup
10. Salt 1 teaspoon
11. Ground black pepper ¼ teaspoon
12. Olive oil ¼ cup

How to cook deliciously - Mediterranean Lentil Salad

1 . Stage

In a saucepan combine lentils, carrots, onion, garlic, bay leaf, and thyme. Add enough water to cover by 1 inch. Bring to boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender but not mushy.

2 . Stage

Drain lentils and vegetables and remove bay leaf. Add olive oil, lemon juice, celery, parsley, salt and pepper. Toss to mix and serve at room temperature.
