1. Olive oil 2 tablespoons
2. Onions, chopped 2 large
3. Green bell pepper, chopped 1 large
4. Yellow bell pepper, chopped 1 medium
5. Carrot, chopped 1 medium
6. Garlic, minced 1 large clove
7. Black beans, rinsed and drained 2 (15 ounce) cans
8. Diced tomatoes in juice, undrained 1 (28 ounce) can
9. Kidney beans, rinsed and drained 1 (15 ounce) can
10. Pinto beans, rinsed and drained 1 (15 ounce) can
11. Chili powder 1 ½ tablespoons
12. Ground cumin 1 teaspoon
13. Dried oregano 1 teaspoon
14. Salt ½ teaspoon
15. Ground black pepper ½ teaspoon

1 . Stage

Heat oil in a Dutch oven over medium-high heat. Add onions, bell peppers, carrot, and garlic. Saute, stirring often to prevent burning, until soft, 5 to 10 minutes.

Add black beans, diced tomatoes with juice, kidney beans, pinto beans, chili powder, cumin, oregano, salt, and pepper; bring to a boil. Reduce heat and simmer for 1 hour.
