2. Distilled white vinegar - ½ cup
3. Vegetable oil - 2 tablespoons
4. Frozen corn, thawed - 1 (16 ounce) package
5. Cucumber, peeled, seeded, and diced - 1
6. Chopped fresh mint - ¾ cup
7. Diced sun-dried tomatoes - ¼ cup

1. Stage

Stir together the sugar, vinegar, and oil in a large bowl until the sugar has dissolved. Stir in the corn, cucumber, mint, and sun-dried tomatoes. Cover, and refrigerate for 1 hour before serving.
