1. Yukon Gold potatoes, peeled and quartered 6 medium
2. Sweet onion, diced 1 small
3. Hard-cooked eggs, chopped 3 large
4. Diced celery ½ cup
5. Chopped sweet pickles ¼ cup
6. Salt and ground black pepper to taste ¼ cup
7. Mayonnaise 1 cup
8. Sweet pickle juice ⅓ cup
9. Prepared yellow mustard 1 teaspoon

1 . Stage

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce the heat to medium-low and simmer until tender, about 20 minutes. Drain.

Transfer potatoes to a large bowl and mash with a potato masher. Stir in onion, eggs, celery, pickles, salt, and pepper.
