Oatmeal Cookie Sandwich with Chocolate

1 . Stage

In a stainless saucepan (at least 0.7-1 liter) with a thick bottom over low heat, melt butter, sugar and honey. Add the baking soda to the hot mixture, stirring constantly, the mixture will begin to foam, "grow" in volume, lighten. Allow the butter and honey mixture to cool to 40-50 degrees (at this stage the mixture will change color to "amber")

2 . Stage

In a bowl mix flour + oat flakes (grind, not very finely). Add the egg to the honey mixture, then the flour mixture, knead the dough, put it in a bag (cling film), put it in the cold for 1 hour, and then.

3 . Stage

Sprinkle the work surface with flour, roll the "rested" dough into a thin (3-5 mm) layer, cut out cookie blanks with shaped notches, put them on a baking tray (on a non-stick mat). Oven 190-200 degrees, bake for 7-8 minutes. (!!! do not overdo it, otherwise they will dry out, they will be too brittle!!!) let the finished cookies cool.

4 . Stage

Melt the chocolate glaze in MIKRO (40% for 2-3 minutes), "glue" two cookies with the melted chocolate.

5 . Stage

Paint on top of any pattern you want. Allow the chocolate frosting to set.
