1. Nonstick cooking spray -
2. Butter - 1 tablespoon
3. Onion, minced - ½ medium
4. Garlic, minced - 1 clove
5. Ground chicken - 1 ½ pounds
6. Rolled oats - 1 cup
7. Shredded zucchini - 1 cup
8. Barbecue sauce, or more to taste - ¼ cup
9. Egg, lightly beaten - 1 large
10. Salt - 1 teaspoon
11. Chili powder - 1 teaspoon
12. Cayenne pepper - ½ teaspoon

How to cook deliciously - Barbeque Chicken Meatloaf

1. Stage

Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.

2. Stage

Melt butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 4 minutes. Transfer to a large bowl.

Add ground chicken, oats, zucchini, barbecue sauce, egg, salt, chili powder, and cayenne to the bowl and mix until well combined. Shape into a loaf and place in the prepared pan. Mixture will be less firm than a traditional meatloaf; this is normal. Glaze with extra barbeque sauce, if desired.

Bake in preheated oven until an instant-read thermometer inserted in the center reads at least 165 degrees F (74 degrees C), about 1 hour 15 minutes.
