1. Coconut oil 1 tablespoon
2. Mahi mahi fillets 2 (4 ounce)
3. Fresh spinach leaves 1 cup
4. Mushrooms, sliced 4 medium
5. Green onions, chopped, or to taste 1 tablespoon
6. Garlic, minced, or to taste 3 cloves
7. Chopped fresh basil, or to taste 1 tablespoon
8. Sea salt to taste 1 tablespoon
9. Hot cooked wild rice 1 cup

1 . Stage

Heat oil on a griddle over medium heat. Add mahi mahi fillets to one side of the griddle and cook until it flakes easily with a fork, about 12 minutes, turning halfway through.
