Ingredients for - Pineapple Pork Chops

1. 6 boneless pork loin chops (5 ounces each) -
2. 1/2 teaspoon salt -
3. 1/2 teaspoon pepper -
4. 3 tablespoons olive oil -
5. 2 shallots, minced -
6. 1 cup pineapple preserves -
7. 1/4 cup soy sauce -
8. 1 tablespoon Dijon mustard -
9. 1 bunch green onions, thinly sliced -

How to cook deliciously - Pineapple Pork Chops

1. Stage

Season the pork chops with salt and pepper. In a large nonstick skillet, heat the olive oil over medium heat. Cook the pork chops until a thermometer reads 145°F, about six to eight minutes on each side. Remove the pork from the pan and reserve the drippings.

2. Stage

In the same pan, saute the shallots in the drippings until they're lightly browned. Whisk together the pineapple preserves, soy sauce and Dijon. Add this mixture to the pan. Bring this to a boil. Reduce the heat and simmer until it is slightly thickened, which should take about five minutes.

3. Stage

Add the pork chops back to the pan and turn to coat. Sprinkle with sliced green onion.
