3. 4 clove garlic -
4. 1 can fava beans -
5. 1 medium yellow summer squash -
6. 2 3/4 c. beef stock -
7. 2 c. diced plum tomatoes -
8. 4 oz. Canadian bacon -
9. 1 tsp. Italian herb seasoning -
10. 1 tsp. red wine vinegar -
11. Salt and pepper to taste -

How to cook deliciously - Quick Fava Bean Soup

1. Stage

Heat the oil in a 6-quart pot over medium-high heat. Add the onion and garlic and sauté until the onion is golden. Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar. Cover and bring to a boil. Reduce the heat and simmer until the squash is tender, about 15 minutes. Taste and season with salt and pepper if needed.
