1. Canola oil - 2 tablespoons
2. Red onion, chopped - ½ medium
3. Green bell pepper, chopped - ½ medium
4. Garlic, crushed - 2 cloves
5. Crushed tomatoes - 1 (28 ounce) can
6. Dark red kidney beans, drained - 1 (15 ounce) can
7. Ground cumin - 2 teaspoons
8. Chili powder - ½ teaspoon
9. Dried oregano - ½ teaspoon
10. Shredded rotisserie chicken - 3 cups

1. Stage

Heat oil in a pot over medium-high heat. Saute onion, bell pepper, and garlic in the hot oil until onion is soft, about 5 minutes. Add tomatoes, kidney beans, cumin, chili powder, and oregano. Let simmer for 15 minutes.
