1. Stage
In a small bowl, combine honey, mustard, rosemary, ground pepper, lemon zest and garlic. Mix well and apply to meat. Cover and pickle in the refrigerator for 24 hours.

Preheat the oven to 220 degrees C. Place the lamb in a roasting pan and sprinkle with salt to taste.

Bake at for 20 minutes at 220 degrees, then reduce heat to 200 degrees and cook for 60 minutes. Let the meat stand for another 10 minutes, then serve.
